BEETROOT SABJI



This is a quick healthy sabji which goes well with chapathi / rice.

Preparation time - 10 minutes
Cooking time – 10 minutes
Serves 4
Ingredients 

  1. Beetroot – 4 small(350-400 gms) – washed, peeled and grated
  2. Green chilli – 3 – cut in half and slit
  3. Turmeric powder – ¼ tsp
  4. Salt to taste
  5. Mustard seeds – 1 tsp
  6. Cumin seeds – 1 tsp
  7. Asafetida – a pinch
  8. Salt to taste
  9. Oil – 1 ½ tsp
  10. Juice of 1 lemon
Method 

  1. Heat oil in a kadhai. 
  2. Add mustard seeds and cumin seeds. When they splutter, add asafetida and green chillies.
  3. Add the grated beetroot.
  4. Add turmeric powder and salt and stir well.
  5. Cook covered on low heat till beetroot becomes tender and water has evaporated.
  6. Turn off the heat.
  7. Add the juice of 1 lemon and mix well. 
  8. Serve hot with chapathis.
