PANEER BHURJI


This is a 'quickie' - using cottage cheese (paneer). If you want more quantity, you can add fresh peas too.

Preparation time - 10 minutes
Cooking time - 15 minutes
Serves 4


Ingredients 

  1. Paneer (cottage cheese) – crumbled – 11/2 cups ( about 200 gms.)
  2. Onion – 2 medium-sized – finely chopped ( about 1 1/2 cups)
  3. Green chilli – 3-4 – finely chopped 
  4. Tomato – 3 -4 firm - medium-sized – finely chopped
  5. Oil – 2 tbsp
  6. Cumin seeds – 1 tsp 
  7. Asafetida – a pinch 
  8. Turmeric powder – ¼ tsp 
  9. Red chilli powder – 1 tsp 
  10. Coriander-cumin powder – 1 tsp 
  11. Sugar – 1/2 - 1 tsp 
  12. Salt to taste 
  13. Fresh coriander – 3 tbsp – finely chopped 


Method 
  1. Heat 2 tbsps oil in a pan. 
  2. Add cumin seeds. When they start spluttering, add a dash of asafetida. 
  3. Add the chopped onions and fry on a low flame. 
  4. When they turn translucent, add the chopped green chilli and stir for 2 minutes. 
  5. Add chopped tomatoes and fry for 2-3 minutes. 
  6. Add turmeric powder, coriander-cumin powder, red chilli powder, sugar and salt and stir well. 
  7. Add the crumbled paneer and keep stirring on low fire for 3-4 minutes. 
  8. Garnish with chopped coriander and serve hot with chapathi.

Peas - Paneer Bhurji


You can add ½ - ¾ cup of frozen peas / boiled peas just before adding the chopped tomatoes and repeat the rest of the process to make peas- paneer bhurji. This will also increase the quantity of sabji.
