WHEAT DOSA - SWEET



'Godhambu' (wheat) dosa (sweet) - is a tasty treat from South India - but you are warned that it might be a sticky wicket for you - pun intended! Keep your calm and patiently try to flip the sticky dosa! Don't be put off - try it - it is worth the trouble. Really!
Makes 12 dosas

Ingredients -
Jaggery – 1 1/2 cups
Wheat flour – 1 1/2 cups
Rice flour – 3 tbsp / Dosa batter – 3 tbsp
Water – 1 1/2 cups
Grated coconut (optional) – 1 1/2 tbsp
 Oil

Method –
Add 1 1/2 cups of jaggery to 3/4 cup of hot water and allow to stand for 15 minutes.
Dissolve the jaggery completely in the water.
Add 3/4 cup of water to it and add 1 1/2 cups of wheat flour and mix the batter well without any lumps. Add 3 tbsp of rice flour/dosa batter and grated coconut and mix well.
Set aside for at least 20 minutes.
Add 1-2 tbsp water if required. The consistency should be of thin dosa batter.
Make dosa on a non-stick tava. Add ½ tsp oil. After a minute, when the bottom side has browned, lower the heat and flip it on the other side and add ½ tsp oil. Remove after a minute.
Tips –
The dosa will have a tendency to be a bit sticky. While it is getting flipped, it will get wrinkled or show a tendency to curl up. Don’t worry, lower the heat and flip it carefully and smoothen it.
Sweet wheat dosa tastes good with unsalted butter.
