The mango season is here! Here’s an easy recipe
for refreshing, yummy mango lassi using fresh ripe mangoes – preferably
alphonso / 'lal bagh' variety.
For 2 glasses of ‘Mango Lassi’ -
Ingredients
Mango pieces – 1 glass (2 ripe mangoes)
Fresh curd – 1 glass
Water - 2 tbsp (if required)
Water - 2 tbsp (if required)
Sugar – 4 - 8 tsps
Milk – 6-8 tbsp
Ice cubes
Method
Peel and cut 2 ripe mangoes into cubes.
Use equal measures of fresh curd and mango (1 glass each),
add 4 - 8 tsp of sugar (depending on the sweetness of the mangoes) and beat in a mixer till well-blended.
Pour out in a vessel. Check the taste and consistency – it has
to be thick, and sweet & sour.
Add 6-8 tbsp of milk (and 1-2 tbsp water if required) to the mixer jar and stir and pour it into the mango lassi.
Mix well and pour into glasses and put them in the fridge.
Add ice cubes before serving.
Tips
If the mangoes are very sweet, less sugar will be needed.
