This healthy and tasty Maharashtrian dish with capsicum and groundnuts is
a quickie.
Preparation time – 10-15 minutes
Cooking time – 10 - 15 minutes
Ingredients
- Capsicum – ½ kg – 6-7 medium-sized – diced (3 cups)
- Groundnut – (dry roasted and powdered) – 6-7 tbsp powder
- Cumin seeds – 1 tsp
- Asafetida – a pinch
- Oil – 2 tsp
- Turmeric powder – ¼ tsp
- Coriander-cumin powder – 2 tsp
- Sugar – a pinch (optional)
- Salt to taste
Method
- Heat oil in a kadhai and add cumin seeds followed by asafetida.
- Then add the diced capsicum followed by turmeric powder, coriander-cumin powder, sugar and salt.
- Stir well and cook covered on low heat for 5 minutes.
- Then add the groundnut powder, stir and cook for 5-10 minutes more without the lid till capsicum is cooked and excess water has evaporated.
Tips
- You can store roasted and powdered groundnut like all Maharashtrian housewives so that you can save preparation time.
