CAPSICUM - GROUNDNUT SABJI

This healthy and tasty Maharashtrian dish with capsicum and groundnuts is a quickie. 


Preparation time – 10-15 minutes

Cooking time – 10 - 15 minutes

Ingredients 

  1. Capsicum – ½ kg – 6-7 medium-sized – diced (3 cups)
  2. Groundnut – (dry roasted and powdered) – 6-7 tbsp powder
  3. Cumin seeds – 1 tsp
  4. Asafetida – a pinch
  5. Oil – 2 tsp
  6. Turmeric powder – ¼ tsp
  7. Coriander-cumin powder – 2 tsp
  8. Sugar – a pinch (optional)
  9. Salt to taste
Method 

  1. Heat oil in a kadhai and add cumin seeds followed by asafetida.
  2. Then add the diced capsicum followed by turmeric powder, coriander-cumin powder, sugar and salt.
  3. Stir well and cook covered on low heat for 5 minutes.
  4. Then add the groundnut powder, stir and cook for 5-10 minutes more without the lid till capsicum is cooked and excess water has evaporated.
                  
Tips

  1. You can store roasted and powdered groundnut like all Maharashtrian housewives so that you can save preparation time.
