This
is a quick healthy sabji which goes well with chapathi / rice.

Ingredients 
- Beetroot – 4 small(350-400 gms) – washed, peeled and grated
 - Green chilli – 3 – cut in half and slit
 - Turmeric powder – ¼ tsp
 - Salt to taste
 - Mustard seeds – 1 tsp
 - Cumin seeds – 1 tsp
 - Asafetida – a pinch
 - Salt to taste
 - Oil – 1 ½ tsp
 - Juice of 1 lemon
 
Method 
- Heat oil in a kadhai.
 - Add mustard seeds and cumin seeds. When they splutter, add asafetida and green chillies.
 - Add the grated beetroot.
 - Add turmeric powder and salt and stir well.
 - Cook covered on low heat till beetroot becomes tender and water has evaporated.
 - Turn off the heat.
 - Add the juice of 1 lemon and mix well.
 - Serve hot with chapathis.
