EGG UTHAPPA



'Egg Uthappa' is an all-time favorite with my family - it is a complete, nutritious and filling breakfast to keep you going right up till lunch. It used to be my sons' staple breakfast on school days; now it is my grand kids'! And don't they love it!
 
Make 4 egg uthappas using the following recipe.

Ingredients for each uthappa -
Egg – 1
Bread slice (2 days old) – 1-1 ½
Onion – chopped fine – 1 tsp
Green chilli – chopped fine – 4-5 pieces
Tomato – chopped fine – 10 bits
Coriander leaves – chopped fine – ½ tsp
A pinch of salt
A pinch of black pepper powder

Method –
Whisk the egg with a fork, adding salt & pepper powder.
Soak the bread slice in water, squeeze out most of the water and crumble it into the beaten egg & blend well.
Add 1 tsp of chopped onion, ½ tsp of coriander leaves & green chilli pieces.
Heat a fry pan, add a tsp of oil/ ghee and pour the egg-bread mixture and spread into an uthappa.
Place tomato pieces along the top.
Flip it when done & take out after a minute.
Serve hot with tomato ketchup.

Tips –
If you want to make 4 egg uthappas, you can beat 4 eggs and add the right proportion of ingredients. But it may so happen that one may turn out to be of small size and another of a bigger size! Personally, I chop the ingredients for all the uthappas, but make each one with one egg at a time!
