Ingredients
- Carrot (grated) – 1 ½ cups
- Curd – 1 ½ cups
- Roasted groundnut (crushed) – 2 tbsp
- Green chilli – 1 (chopped fine)
- Coriander leaves (chopped fine) – 1 tbsp
- Mustard seeds – 1 tsp
- Urad dal - 1 tsp
- Asafetida – a pinch
- Oil – 1 tsp
- Salt to taste
Method
- Wash, scrape and grate the carrots.
- Whisk the curd with salt.
- Heat oil in a pan and add mustard seeds, urad dal and asafetida.
- When they splutter, add the chopped green chilli and then add the grated carrots and stir for a minute on low heat.
- Transfer this to the whisked curd.
- Add crushed groundnuts and chopped coriander leaves and mix well.
- Serve with pulao / rice / chapathi.
Tips
- Kids will love it for the lovely pinkish red color.
- You can add finely chopped cucumber pieces too if you desire; and finely chopped mango pieces (non-sour variety) too!
