CARROT - RAWA KESARI



This is a healthy sweet - a variant of the popular 'kesari' / 'sheera' made of rawa (semolina).
                                    
Ingredients
Grated carrot – ½ cup
Semolina (rawa) – ½ cup
Ghee – ½ cup
Sugar – ½  - ¾ cup
Water – ¾ cup
Powdered cardamom – ½ tsp
Cashews – 1 tbsp
Raisins – 1 tbsp

Method -
Take ½ cup ghee in a pan, fry cashews and raisins till brown and remove.
Roast the rawa in the same ghee for a few minutes and remove.
Then add the grated carrot and fry on low heat till dry.
Add rawa to it.
Add ¾ cup water and bring to bring to boil on low flame and cook till dry.
Add ½ cup sugar and keep stirring on low heat till dry.
Add cardamom powder and garnish with cashews and raisins.
